James Beard Award–winning chef Melissa Kelly (author of Mediterranean Women Stay Slim, Too) infuses fresh Central Florida produce and seafood with the flavors of the Mediterranean at this upscale hotel restaurant. The result: clean, simple, seasonal, and always skillfully executed dishes on a daily-changing menu, such as handmade tagliatelle pasta with Key West shrimp, braised greens, and cracked black pepper; quail stuffed with anise sausage, spinach, and wild mushrooms; and sautéed scaloppine of pork saltimbocca in a sage-infused mushroom-Madeira jus with prosciutto, spinach, and roasted garlic mash. The dedicated pastry chef, Price Kushner, has a flair for seasonal, rustic confections like strawberry rhubarb crostata with brown sugar gelato and Meyer lemon–scented crème brûlée.

Tip: The restaurant’s private herb and vegetable garden, next to the hotel, supplies the chefs year-round; ask your server for a tour.
